Easy Spaghetti Carbonara


Ingredients:


  • 8 oz (225g) spaghetti
  • 4 slices of bacon or pancetta, chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped fresh parsley (optional, for garnish)





Instructions:




  • Cook the spaghetti in a large pot of boiling salted water according to the package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the spaghetti and set aside.
  • In a large skillet, cook the chopped bacon or pancetta over medium heat until crispy. Add the minced garlic and cook for another minute until fragrant. Remove from heat.
  • In a small bowl, whisk together the eggs, grated Parmesan cheese, and a pinch of black pepper.
  • Return the skillet with the bacon and garlic to low heat. Add the cooked spaghetti to the skillet and toss to combine with the bacon and garlic.
  • Pour the egg and cheese mixture over the spaghetti, quickly tossing to coat the pasta evenly. If the mixture seems too thick, gradually add some of the reserved pasta cooking water to loosen it up.
  • Season with salt and additional black pepper to taste. Garnish with chopped fresh parsley if desired.
  • Serve immediately, while still hot. Enjoy your delicious spaghetti carbonara!
